Recipe : Bonito Flakes & Cheese Onigiri

In this recipe video, I will show you how to make “2 version” Onigiri (Japanese Rice Balls) with using bonito flakes and cheese. I also introduce Japanese breakfast set meal ideas. 

Ingredients (6 rice balls):

Okaka rice:
600g Japanese rice *steamed
10g Bonito flakes
1 Tbsp Canola oil
1 Tbsp Soy sauce
1 Tbsp White sesame seeds
1 pinch Salt

Grilled version:
300g Okaka rice
25g Parmesan cheese *grated
25g Cheddar cheese *grated
1 Tbsp Canola oil
Soy sauce, to your taste

Hand-formed version:
300g Okaka rice
25g Parmesan cheese *block-type
25g Cheddar cheese *block-type
3 sheet Nori seaweed

Directions:

Okaka rice:
1. Heat the pot with medium heat and add bonito flakes. Toast it until it has fragrant aroma.
2. Put canola oil and soy sauce in a pot. Quickly stir and turn off the heat.
3. Add white sesame seeds and lightly stir with remaining heat.
4. Prepare cooked rice in a bowl and add seasoned bonito flakes. Gently mix.
5. Divide the okaka rice into two.

Grilled version:
6. Grate both the parmesan and cheddar cheese. Then, add to the okaka rice.
7. Add salt and mix well.
8. With using plastic cellophane, make 3 triangle shape onigiri.
9. Prepare the frying pan and grill the onigiri with medium heat. *Spray extra soy sauce, if needed.

Hand-formed version:
10. Cut the cheese into cube sizes. Then, add to the okaka rice and gently mix.
11.With using plastic cellophane, make 3 triangle shape onigiri.
12. Cover with nori seaweed.

YUCa’s Tips:

1. Please control the good point of the heat before okaka starts to burn.
2. Use light color oil (canola oil, rape sheed oil, sunflower oil etc.)
3. Use few kinds of cheese to add rich flavor.
4. 
Use block cheese for hand formed onigiri. Not for the grilled one.
