Recipe : Yakitori

Yakitori (焼き鳥) is a dish often served with sake and consists of various chicken parts skewered and grilled on a special grill. It is usually served with salt, pepper, or a special soy sauce-based sauce. In this video, we will show you how to make a “yakitori kit” developed by an upscale yakitori restaurant in Japan, and how to eat different parts of the yakitori.


Ingredients (2 servings):

Chicken thigh
Chicken wing
Chicken neck
Chicken tail
Chicken gizzard

Seasoning:
Charcoal oil
Roasted Salt
Yakitori sauce
Salt & Pepper
Black pepper
Black Shichimi
Yuzu pepper

Directions:

Chicken Thigh
1. Grill the chicken for 4 minutes one side.
2. Turn over the chicken and grill another 4 minutes.
3. Prepare yakitori sauce and put the sauce over the chicken.
4. Enjoy with yuzu pepper!

Chicken Wing
1. Put Charcoal oil over the chicken.
2. Grill the chicken for 7 minutes one side.
3. Turn over the chicken and grill another 7 minutes.
4. Enjoy with Black shichimi.

Chicken Neck
1. Put Charcoal oil and sprinkle roasted salt over the chicken.
2. Grill for 4 minutes each sides.
3. Enjoy with truffle and salt.

Chicken Tail
1. Put Charcoal oil and sprinkle roasted salt over the chicken.
2. Grill for 6 minutes each sides.
3. Enjoy with black pepper.

Chicken Gizzard
1. Put Charcoal oil and sprinkle roasted salt over the chicken.
2. Grill for 2 minutes each sides.
3. Grill for 2 minutes each sides again.
4. Enjoy with smoked salt (aroma of sakura cherry blossoms).
