Mochi Ice Cream

Overseas, Mochi is recognized as a sweet wrapped in ice cream. In Japan, a particular product from a certain confectionery maker, often found in convenience stores and supermarkets, is well known. This recipe uses vanilla ice cream, but you can customize it with your favorite ice cream.

Ingredients (10 servings) :

100g Shiratamako *glutinous rice flour
50g Sugar
180ml Water
Potato starch, as needed
Ice cream *Any flavor is OK!

Directions :

1. Scoop out 10 small ice cream balls. Move to the freezer.
2. Put Shiratamako and water in a bowl and mix well until it gets smooth. Then, add sugar and stir well.
3. Put plastic cellophane over the bowl, then move to the microwave and warm it for 2 minutes (600W). Take out from the microwave and mix well with using rubber spatula to gather the dough. Warm it again for another 30 seconds. Then, mix again to gather the mochi. *Repeat one more time
4. Wrap the cutting board with plastic cellophane. Apply the potato starch over the cellophane. Then, put the mochi on it, then flatten the surface with using rolling pin. Move to the fridge to cool it for 15 minutes.
5. Cut out 10 sheets of round shape mochi. Stuck them in a layer. Move to the fridge to cool it for 30 minutes.
6. Put ice cream balls on each mochi wrappers and fold them. Move to the freezer for 30 minutes to set.
