Recipe : Grilled Onigiri vol.2

In this video, I will show you how to make Grilled Rice Balls (Yaki Onigiri). In my previous video, I introduced the basic grilled onigiri recipe: Classic style and Modern style. This time, I’ll introduce two additional flavors; Okaka & Cheese and Miso & Shiso. I’ll also introduce Japanese style breakfast ideas with these Yaki Onigiri.

Ingredients (6 rice balls) :

Okaka & Cheese Flavor:
300g Japanese rice *steamed
5g Bonito flakes
15g Cheese *block type
25g Cheese *grated
1 tsp Soy sauce
1 tsp Mirin
1 tsp Sesame oil
2 Tbsp Canola oil

Miso & Shiso Flavor:
300g Japanese rice *steamed
1/2 Tbsp Red Miso
1/2 Tbsp White Miso
1 tsp Sugar
2 tsp Mirin
2 Tbsp White sesame seeds
2 pinches of Salt
2 Tbsp Canola oil
6 Shiso

Directions:

Okaka & Cheese Flavor:
1. Cut the block type cheese into small pieces.
2. Crush the dried bonito flakes into small pieces.
3. Prepare steamed rice and add bonito flakes, soy sauce, mirin, sesame oil and cheese. Then, mix the rice and divide into 3 pieces.
4. Prepare the plastic cellophane and put mixed rice over it. Wrap the rice and make round shape.
5. Heat a frying pan with low to medium flame and pour canola oil. Place round shape rice balls and grill until both sides get brown color.

Miso & Shiso Flavor:
1. Heat a frying pan with medium flame and toast the white sesame seeds.
2. Prepare a small bowl and put miso, sugar, mirin. Then, lightly mix.
3. Prepare steamed rice and add white sesame seeds and salt. Then, mix the rice and divide into 3 pieces.
4. Prepare the plastic cellophane and put mixed rice over it. Wrap the rice and make round shape.
5. Heat a frying pan with low to medium flame and pour canola oil. Place round shape rice balls and grill until both sides get lightly brown color.
6. Place 3 shiso on a serving plate.
7. Put half the miso sauce on the surface of grilled onigiri. Turn to the low heat and flip grilled onigiri.
8. Quickly apply the remaining miso sauce to the other side and turn it over again.
9. Take out grilled onigiri from a frying pan and put it over the shiso. Then, Put another shiso on the surface to sandwich grilled onigiri.


YUCa’s Tip :

1. Prepare either warm or hot Japanese rice when making onigiri.
2. Okaka & Cheese Grilled Onigiri : Crush the dried bonito flakes into small pieces. Use 2 to 3 types of cheese to add more rich flavor.
3. Miso & Shiso Grilled Onigiri : To avoid burning the miso sauce, turn over the onigiri quickly!
