Cup Chirashi Sushi (Chirashizushi)

An important spring event is the Dolls’ Festival called “Hinamatsuri”. For the Dolls’ Festival, people usually eat Chirashi-zushi, a sushi dish made with fresh seafood and other ingredients. However, it is a little difficult for children to eat, so I made cup sushi using ingredients that are fun to look at and easy for children to eat.


Ingredients (4 servings):

300g Japanese Rice (10.5 oz) *steamed
1 Tbsp Denbu *mashed and seasoned fish
Edamame, as needed
Salmon roe, as needed

Egg Soboro:
1 Egg
1/2 Tbsp Japanese Mayonnaise
1/2 Tbsp Mirin
1 tsp Sugar
1 tsp Soy sauce
1/2 Tbsp Canola oil

Chicken Soboro:
100g Ground chicken (3.5 oz)
1 Tbsp Soy sauce
1 Tbsp Sugar
1/2 Tbsp Mirin
1/2 tsp Ginger paste
1/2 Tbsp Canola oil


Directions:

1. Crack the eggs into a bowl, add mayonnaise, mirin, sugar, and soy sauce, and mix well.


2. Place oil in a small pan over medium heat.
3. When the pan is hot, add the egg mixture and stir well with four cooking chopsticks.


4. When cooked, turn off the heat and transfer it to a container.
5. In a separate bowl, add the minced chicken, soy sauce, mirin, sugar, and ginger and mix well.
6. In the same way, coat a small pan with oil and place over medium heat.
7. When the pan becomes hot, add the minced chicken and stir well with four cooking chopsticks.
8. When the mixture is cooked, turn off the heat and transfer to a container.
9. Divide the rice into three equal portions and mix each portion with chicken soboro, egg soboro, and denbu. Mix each in the bowls very well.
10. Prepare a clear cup and put a layer of each rice mixture in this order: rice with minced chicken, rice with denbu, and rice with minced egg.


11. Top with salmon roe and edamame.

YUCa’s Tips:

1. The eggs will be fluffy, but the mayonnaise is optional.
2. Prepare at least four chopsticks to make fine soboro.
3. Layer the mixed rice not to press too hard.
