Recipe : Amazake + 3 Flavors

In this recipe video, I will show you how to make Japanese superfood and also fermented rice drink called “Amazake”. This Amazake is made of Rice Koji (mold) and Rice Porridge, and is one of the Japanese vegan foods as well. This recipe video is the remake and upgraded version of my previous Amazake recipe. So this time, I will share three flavors. I hope you enjoy this tutorial and give it a try!

Ingredients (About 1L):

Plain Amazake:
1 Cup (200ml) Japanese rice
3 cup (600ml) Water *For making rice porridge
1.5 cup (300ml) Water *For lower the temperature of rice porridge
200g Kome Koji  *Rice mold  https://amzn.to/35IfOQM

Cacao flavor:
50ml  Amazake
1/2 Tbsp Cacao powder
Powder sugar, as needed

Kinako & Sesame flavor:
50ml  Amazake
1 Tbsp White sesame *ground
1/2 tsp Kinako *Dried soybean powder  https://amzn.to/3svMPcv
Brown sugar syrup, to your taste  https://amzn.to/39wKUMo

Banana & Soymilk flavor:
1/2 Cup (100ml) Soymilk
3/4 Cup (150ml) Amazake
1/2 size Banana

Directions: 

Plain Amazake:
1. Wash the rice in plain water and transfer it to a rice cooker together with water and cook it.
2. Once the rice is done cooking, add another water and lower the temperature of the mixture of 60 ℃, which will allow the kome koji to become active.
3. Break up any lumps in the kome koji, add it to the rice and mix well.
4. Leave the lid of the rice cooker open and set the cooker to “warm”. Check the temperature of the mixture occasionally to keep it around 60℃. Stir occasionally and your Amazake will be done in 8 hours.


Cacao flavor:
1. Pour Amazake in a cup.
2. Add cacao powder and powder sugar and stir well.

Kinako & Sesame flavor:
1. Pour Amazake in a cup.
2. Add kinako and ground sesame powder on top.
3. Grizzle the brown sugar syrup.

Banana & Soymilk flavor:
1. Put banana, soymilk and amazake in a mixer and blend well.

YUCa’s Tips:

1.  Be patient and keep the Amazake temperature 55-70 degrees for 8 hours
2.  Use rice cooker, thermos or yogurt maker to make Amazake
3.  Stir the Amazake and check the temperature every 2 hours
