Recipe : Pickled Red Turnips with Yuzu peel
This Pickled Red Turnip with Yuzu peel recipe is a perfect balance of sweet and tangy — a refreshing side dish that adds a pop of color to any meal. Quick and easy to make, these vibrant turnips are a great addition to salads, rice bowls, or just enjoyed on their own as a light, crunchy snack!
Ingredients (2 servings) :
- 100g Red turnips
- 1/2 tsp Salt
- 1 Tbsp Dried Yuzu peel
- 1 Tbsp Water
- 1 Tbsp Vinegar
- 1 Tbsp Sugar
Instructions :
1. Prepare the turnips
Wash the red turnips thoroughly, removing any fine roots or blemishes. Cut off the stems and roots. Slice the turnips into thin 1mm slices, keeping the skin on.
2. Massage with salt
Place the sliced turnips and salt in a bowl, massage well, and let them sit for about 5 minutes.
3. Rehydrate the dried Yuzu peel
Pour water over the dried yuzu peel and wait for a few minutes.
4. Drain the excess water from red turnips
Squeeze the red turnips very well with hands.
5. Mix the ingredients
Add the vinegar, sugar, yuzu peel to the turnips. Mix everything together and serve in a dish.
