Tokyo Guide : Menson RAGE (麺尊 RAGE)
Menson RAGE (麺尊 RAGE) has been featured in the Michelin Guide every year since its opening and is famous for its high-quality soy sauce ramen, attracting long lines of customers.
The interior has a unique atmosphere, with hip-hop music playing, shelves filled with the SF action comic AKIRA, and street-style graphics adorning the walls.
While the original location is in the Nishi-Ogikubo area, we visited the Azabudai Hills branch.
At the Azabudai Hills branch, there are six types of ramen: Shamo (game chicken) soba, Niboshi soba, Tsuke soba, Maze soba, Niku Abura soba, and Vegan ramen. Toppings like a boiled egg and char siu can also be added. Tsuke soba is served in the dipping noodle style, while Maze soba and Niku Abura soba are ramen without broth. Niboshi soba, Shamo soba, and Vegan ramen are closer to the traditional ramen you might imagine.
Among these, the signature dish is the Shamo soba.
The soup has a light chicken flavor, with the richness of soy sauce initially hitting the palate, followed by the perfectly extracted aftertaste of the Shamo broth. The homemade bamboo shoots provide a nice crunch, while the bean sprouts add a refreshing bite. The thin noodles have a chewy texture, and everything — from the bamboo shoots and chopped onions to the tender char siu — harmonizes perfectly.
The Vegan ramen features a creamy white soup base made from soy milk, with a rich garlic flavor. The texture of the vegan char siu was also satisfying, and I was able to finish the bowl quickly along with the thin noodles. It was definitely a bowl I’d want to have again!
