Do you know this fish shape waffle? This is called Taiyaki (鯛焼き). “Tai (鯛)” means a carp and “Yaki (焼き)” means stir-fry or bake in Japanese. To make this shape, you need to buy special waffle machine. You can buy online or electric stores here in Japan to make at home or you can find Taiyaki shops at many places here in Japan. Usually, Taiyaki has red bean paste inside but some shops sell custard cream, matcha cream, sweet potato paste, Chocolate cream, Sesame cream etc. In this recipe, I introduce the traditional Taiyaki which has red bean paste inside. Enjoy!

Ingredients (about 10 pieces):

200g  Flour
2 tsp  Baking soda
150ml  Water
100ml  Milk
1 Tbsp  Sugar
Pinch of Salt
Red bean paste, as needed

Directions:

1. Mix flour, baking soda, sugar and salt in a bowl.


2. Mix water and milk in another bowl.
3. Pour the mixture (2) in a bowl (1) little by little and mix well.

4. Move the dough to the fridge and cool it down for about 1 hour.
5. Pour the dough into the hot poison plate. Put the red bean paste on top, pour additional dough on top and close the cover.

6. After about 5 minutes, take out the Taiyaki from the plate.

One of the most popular sandwiches in Japan is the egg sandwich. Convenience stores, supermarkets, and specialty stores sell a variety of egg sandwiches, and I have already introduced two recipes on my blog. This time, I will introduce the deluxe version Egg Sandwich; Egg Mayo Salad + Soft-boiled Egg combo style. If you are egg lovers, this is the perfect recipe for you!
Ingredients (2 servings):

2 slice Shoku-pan
2 tsp Dijon mustard
Parsley, as needed

Egg salad:

2 Egg
3 Tbsp Mayonnaise (*)
1 tsp Ketchup
Salt & Pepper, as needed

Soft-boiled egg:
2 Egg

(*) Homemade Mayonnaise:
1 Egg yolk
1 tsp (5ml) Japanese mustard
2 tsp (10ml) Rice vinegar
120ml Rice oil *Canola oil is also OK!
Salt & Pepper, to your taste

Directions:

1. (Homemade Mayonnaise) Put egg yolk, salt, white pepper, rice vinegar and mustard in a bowl.
2. Add the oil little by little and stir until it becomes heavy and creamy texture.


3. (Egg salad) Put eggs in a water and bring to a boil for 11 minutes total.
4. Remove the eggs from a pot and put them in water. Then, peel the egg shell.


5. Put eggs in a bowl and add mayonnaise, salt and white pepper. Then, mix well until it gets small chunks.


6. (Soft-boiled egg) Prepare the boiling water and boil the egg for 6 minutes 50 seconds.
7. Move the egg to the bowl with ice water. Then, peel the egg.


8. Put mustard over the both breads. Then, add the egg salad.


9. In the middle of the bread, put the half-boiled egg horizontally. Put other bread on top.
10. Wrap the sandwich with parchment paper.


11. Slice the bread in half. Done!

YUCa’s Tips:

1.  For soft boiled egg, start from the boiling water and boil for 6 min 50 sec.
2. When making Mayonnaise, pour the canola oil and stir at the same speed.
3. When cutting, be αware of the direction of soft-boiled egg.
4. Cellophane can be used as α substitution for parchment paper.
5. 
Recommend to add chopped onion or greens in the egg salad.

Overseas, Mochi is recognized as a sweet wrapped in ice cream. In Japan, a particular product from a certain confectionery maker, often found in convenience stores and supermarkets, is well known. This recipe uses vanilla ice cream, but you can customize it with your favorite ice cream.

Ingredients (10 servings) :

100g Shiratamako *glutinous rice flour
50g Sugar
180ml Water
Potato starch, as needed
Ice cream *Any flavor is OK!

Directions :

1. Scoop out 10 small ice cream balls. Move to the freezer.
2. Put Shiratamako and water in a bowl and mix well until it gets smooth. Then, add sugar and stir well.
3. Put plastic cellophane over the bowl, then move to the microwave and warm it for 2 minutes (600W). Take out from the microwave and mix well with using rubber spatula to gather the dough. Warm it again for another 30 seconds. Then, mix again to gather the mochi. *Repeat one more time
4. Wrap the cutting board with plastic cellophane. Apply the potato starch over the cellophane. Then, put the mochi on it, then flatten the surface with using rolling pin. Move to the fridge to cool it for 15 minutes.
5. Cut out 10 sheets of round shape mochi. Stuck them in a layer. Move to the fridge to cool it for 30 minutes.
6. Put ice cream balls on each mochi wrappers and fold them. Move to the freezer for 30 minutes to set.

Ozoni (お雑煮) is a Japanese New Year’s Soup with Mochi. In Japan, people enjoy this seasonal soup on New Year’s time. There are 2 types; Kanto-style (Tokyo area) and Kansai-style (Kyoto area). Tokyo style has soy sauce based soup with chicken and mochi, mainly. Kyoto style has white miso based soup with yam and mochi. This time, we will make Tokyo style.

Ingredients (2 servings) :

6 slice Daikon radish
6 piece Carrot
2 Shiitake mushroom
6 slice Kamaboko  *fish cake
Yuzu peel, as needed
1 bundle (60g) Komatsuna

2.5 Cup (500ml) Dashi  *soup stock
50g Chicken thigh
1 tsp (5ml) Soy sauce
1/2 tsp Salt

4 block Rice cake

Directions :

1. Cut daikon radishes into bite-sized pieces. Slice and mold the carrots. Make an incision in the surface of the shiitake mushrooms. Thinly slice the kamaboko. Use the tip of the knife and peel off the yuzu cotton. Then, slice the peel thinly.


2. Prepare a pot of water and start boiling the komatsuna from the stems.

3. After that, boil the leaves. Add a pinch of salt, then put carrot and daikon radish.


4. Take out the komatsuna from the pot and cool in water. Squeeze it well and cut into small sizes. Take out the carrot and daikon from the pot.
5. Prepare the pot and pour the Dashi. Place over medium heat and add soy sauce, salt, and chicken.
6. When the chicken is cooked, add shiitake mushrooms, fish cake, carrots, and daikon.


7. Place the baked rice cake in a bowl and top with the ingredients. Place the yuzu peel on top.


8. Finally, pour in the soup.

YUCa’s Tips :

1. Start boiling daikon and carrot with Komatsuna.
2. Add a small amout of sake into the soup for deeper flavor.
3. When baking rice cakes in a toaster, be careful not to burn them.

Oshiruko (おしるこ、お汁粉) is a sweet red bean soup with mochi or shiratama dumplings in it. This is one of the traditional soup sweets in Japan. A dish similar to oshiruko is called zenzai (ぜんざい). In the Kanto region, zenzai is rice cake poured with red bean paste. You can taste this hidden sweets at traditional Japanese sweets shop called Kanmi-dokoro (甘味処). If you order oshiruko at a shop, you may find it comes with oshinko (お新香). The salty oshinko enhances the sweetness of oshiruko.
In this recipe, you will see two types of Oshiruko; one with the block type pre-made mochi and the one with shiratama dumplings made of glutinous rice flour.

Ingredients (2 servings):

1 block  Mochi *premade
30g  Shiratamako *glutinous rice powder
30g  Water
200g  Red bean paste
200ml  Water

Option:
Pinch of Salt


Directions:

1. Grill the premade mochi until it becomes brown color.
2. Knead the Shiratamako and water in a mixing bowl until the dough is as soft as an earlobe.
*The more you knead it, the softer the dumplings become.
3. Shape the dough into a ball. Divide it into 4 pieces.
4. In a pot, bring water to a boil. Add all the dumplings to boiling water.
Once the dumplings start floating on top of water, continue boiling them for another 3 minutes.


5. Place dumplings in iced water and let them cool.


6. Put red bean paste and water in another pot. Slowly stir and heat them with low heat until red bean paste becomes smooth.


7. Place mochi in a bow and pour the red bean paste soup over the mochi.

Japanese green tea is loved by people as an indispensable drink for daily health maintenance.
It is rich in vitamins, minerals, dietary fiber, catechins, and other nutrients, and has the following benefits.

In Japan, green tea is grown over a wide area, from Akita in the north to Okinawa in the south.
Major production areas include Shizuoka, Kagoshima, Mie, Kyoto, and Saitama prefectures.

This time, as the first phase of YUCa’s Tea, we chose Chiran-cha (知覧茶) from Kagoshima prefecture.
Chiran-cha is a brand of green tea produced in Minami-Kyushu City, Kagoshima Prefecture, which boasts the largest production volume in Japan.

Minami-Kyushu City has the perfect conditions for producing delicious tea, with well-drained, fertile soil created by the volcanic ash of Sakurajima(桜島), a mild climate throughout the year, and abundant sunshine.

Chiran-cha is also famous as a deep steamed tea, and is characterized by its mild flavor after drinking.

To make it easy to enjoy Chiran-cha, the teabag style is designed to be easy to drink in a mug.
Also, on the back of the product, we have included instructions on how to enjoy the tea both hot and iced.

Behind the Scenes…

I actually went to Kagoshima to visit the actual Chiran-cha plantation and taste the tea.


My husband was very instrumental in the launch of YUCa’s Tea!
The color of the tea bag was decided to be gold, which has a refined and elegant atmosphere.
In creating the label, which is the face of YUCa’s Tea, we wanted to create a unique world view of YUCa’s Tea, and I tried my hand at calligraphy for the first time in a long time!
I wrote about 30 sheets of calligraphy in a variety of styles and brush pressure and the final work was created!
I like the final work very much because it looks like a tea leaf growing in the full sunlight.

Torinoichi(酉の市) is an event held at temples and shrines associated with eagles and birds, such as Tori-no-temples, which are numerous in the Kanto region. 

Held every year on the “day of the Tori”(酉の日) in November, visitors purchase lucky charms such as “Kumade”to report their good fortune for the year and wish for good fortune in the following.

The Kumade, used as a tool for raking up fallen leaves and other debris, is said to be “a tool for raking up luck” or “a tool for raking up gold and silver” because of its shape and function, and has come to be treated as a lucky charm that brings luck, fortune, and prosperity to business.


When purchasing a Kumade for the first time, choose the smallest size possible. This is because it is believed that it is better to gradually increase the size from year to year so as to stir up more luck and fortune than in the previous year. It is said that if you buy a smaller Kumade than the previous year, your good fortune and luck will decrease, so be careful when choosing the size.

Basically, a Kumade should be displayed higher than a person’s head. If it is at an entrance, it should face the entrance, and if elsewhere, it should face east (for good luck in business), south (for good position and honor), and west (for good luck in money). Do not display it facing north. When you dispose of your rake, bring it to the following year’s Tori-no-ichi (rooster market) and place it at the “Kumaten-odome place” while expressing your gratitude for the year.

We chose a Kumade with “Laughing Gate(笑門)” written on it. We chose it because we like the Japanese proverb, “When laughter comes to the gate, good fortune comes to the gate”. We hope to be our cooking class with lots of laughter and learning!

Azabu Juban (麻布十番) is a district of Minato (Minato-ward) in Tokyo. Nestled between Roppongi and Tokyo Tower, Azabu Juban is a surprisingly laid-back neighborhood considering its central location. The convenience of several supermarkets in a central location and the proximity of Hiroo and Roppongi make it one of the more trendy and sought after residential areas of Tokyo. With an old-school atmosphere that retains its Edo period roots, this upscale residential area boasts some of the highest rents in the city.

Azabu Juban is also home to several embassies, making it a popular place of residence for diplomats and globally-minded people. This synergy between traditional and metropolitan gives the neighborhood a truly one-of-a-kind feel.

3 Things to do in Azabu Juban area

1. Try various Japanese famous local foods at Azabu Juban Shotengai (shopping street), which has 300 year old history.

2. Join the Azabu Juban Matsuri in Summer : Azabu-Juban holds one of the most famous local summer festival. The event takes place over two days on Saturday and Sunday with the streets being lined with local stalls and food vendors.

On the last weekend of August, residents come together for the Azabu-juban Noryo Festival. Drink and be merry with the hordes of revelers who congregate on the street, sampling foods from across the country at the many food stalls set up for the festival.

3. Join the “Minato Shichifukujin Meguri” walking tour and collect stamps!

From January 1st to Coming-of-Age Day, a tour of the Seven Lucky Gods of the Port has been conducted. The Seven Lucky Gods Tour is a New Year’s event where you visit the shrines and temples that enshrine the Seven Lucky Gods and wish for good luck and your family’s safety that year.

About Azabu Juban Shotengai (Shopping street/district)

Azabu-juban Shopping District is the focal point of the neighborhood, lined with over 300 shops, many of which have been around for over 100 years. More recently, as the area has become popular with foreign embassies, diplomats, and foreign workers, the street has welcomed international up-market boutiques, cafes and restaurants. You can enjoy foreign cuisine like burritos, Italian food, and pasta while also trying traditional Japanese confections and rice crackers.

Foods I recommend

– Taiyaki at Naniwaya-sohonten (浪花屋総本店)

This shop it the origin of Taiyaki (fish shape waffle with red bean paste inside)!
According to the “Encyclopedia of Origin of Food”, it is said that Taiyaki was created by Seijiro Kobe, the founder of Naniwaya Sohonten, which was founded in 1909 (Meiji 42).

He started the “Imagawa-yaki” (round shape waffle) but it didn’t sell at all, and then turtle-shaped “Kame-yaki” also failed. However, when he made it into a happy sea bream figure, it’s sold like a fly.

As for why he chose the sea bream figure, the sea bream (Tai, in Japanese) leads to a lucky charm (Medetai). Also, the real sea bream was a luxury item that was hard to get into the mouth of the common people. So, he imitated it so that everyone can eat. What a nice story!

The fragrant thin skin and plenty of sweet bean paste. In keeping with tradition, they are still carefully baking one by one. Please enjoy the freshly baked hot Taiyaki so that you can enjoy the crispy texture.

(By the way, Naniwa is the name of the town in Osaka, where the Seijiro came from.)

This is a new style miso soup stand opened this year in Azabu-juban area.
You can choose among 4 types miso and 9 different fillings to create your own miso soup.

– Okaki at Mame Gen (豆源)

Since our founding in the first year of Keio (1856), Mame Gen has pursued the taste of bean confectionery with a manufacturing method that preserves the taste and flavor of beans.

The name of the shop “Mame Gen” came from the first/founder Surugaya Genbei was nicknamed “Mameya no Genbei” means the bean-seller Genbei. He seems to have been familiar to the people of Edo city with roasted beans on his shoulders and walking around the stall cart.

The most popular is the “Otoboke Beans”, which contains three types of bean confectionery: green laver, chopped seaweed, and shrimp.

This shop is famous for bean confectionery but I recommend their Okaki!
Okaki is a fried rice cracker.

The dough is carefully dried in the sun one by one. It is still made by the old-fashioned simple method of deep-fried rice bran oil and sesame oil, which are hot to 240 degrees Celsius, and sprinkle with salt.

In the shop, you can buy freshly fried Okaki, which tastes much better than Okaki in a plastic bag!
I recommend to go there and wait until it’s prepared at the best timing!

– Karinto at Azabu Karinto (麻布かりんと)

Azabu Karinto is a specialty shop only for Karinto, which is a cracker coated with brown sugar syrup.
Inside the store, you can find a wide variety of Karinto wrapped in cute packages.

There are 50 kinds Karinto and also limited and seasonal products like Halloween Karinto with using pumpkin.

If you are beginner of Karinto, I recommend to try their most popular and signature product called Azabu Karinto, Which is the same name of the shop. By the way, second popular is Kimpira gobo Karinto, then Swirl Karinto as the 3rd.

For eating while walking, I recommend the store-limited “Kogashi Kuromitsu Karintoman”. The freshly fried fragrant from brown sugar syrup spreads in your mouth, and it’s delicious to make you sick!

– Waffle Anko at Aazabu-juban Kibundo (麻布十番 紀文堂)

Azabu-juban Kibundo and was founded in 1910 (Meiji 43) and is famous for Japanese-style waffles.
This fusion sweets of Waffle with red bean paste inside has the impact from western and Japanese sweets. The fluffy dough contains red bean paste called Anko. There is a similar looking sweets called Dorayaki in Japan but unlike Dorayaki dough, it is light and fluffy. This is made of waffle, so I am sure many of you feel free to make it. Nanbanzuke (南蛮漬け) is a dish in which fish or meat is deep fried and then marinated in sweet vinegar and aromatic vegetables such as red pepper and leeks. The term “Nanban” comes from the “Nanban trade (南蛮貿易)” that began around the 16th to 17th century, and refers to the people and products of Spain and Portugal, who were the trading partners at that time.

It is said that the escabeche and its unique cooking method introduced from these countries gave rise to the term “Nanbanzuke”.

Nanban-zu(南蛮酢), made by adding soy sauce, sugar, and other seasonings to vinegar, has a familiar sweet and sour taste. It is delicious hot or cold, and the flavor changes depending on how long the fish has been marinated. This time, we will introduce Nanbanzuke using salmon.


Ingredients (2 servings) :

Salmon Nanbanzuke:
2 fillet Salmon
1/2 tsp Ginger juice
1 Tbsp Mirin  *Sake is also OK!
2 tsp Soy sauce
Canola oil, as needed
Potato starch, as needed

(Nanban sauce:)
30g Carrot
20g Cucumber
2 Cherry tomato
3 Tbsp Dashi *soup stock
1 Tbsp Sugar
1/2 Tbsp Soy sauce
2 tsp Rice vinegar

Tofu Salad:
1/2 size Silken tofu
1/2 piece Shiitake mushroom
1 bundle Spinach
30g Carrot
1/2 Cup Dashi
1 tsp Soy sauce
1 tsp Sugar

(Seasonings:)
1 tsp Soy sauce
2 Tbsp White sesame
1 tsp White miso
1 Tbsp Sugar

Miso soup:
2 Cup (400ml) Dashi soup stock
2 Tbsp Miso
1 bundle Rape blossoms
1/4 sheet Fried tofu
1/2 piece Shiitake mushroom

mini Onigiri:
200g Japanese rice *steamed
1/4 size Nori seaweed
Water, as needed

Directions :

Salmon nanbanzuke:
1. Grate ginger and squeeze out the juice.
2. Cut the salmon to make 4 fillets total. Then, marinate with soy sauce and mirin.


3. Cut carrot, cucumber and cherry tomato into small pieces. Then, microwave for 2 minutes.
4. Put dashi, soy sauce, sugar and rice vinegar in a bowl and heat until sugar dissolves.


5. Coat the salmon with potato starch and deep fry until golden brown.


6. Put the mixture (4) in a pot, add vegetables. Then, add potato starch and stir well to make starchy sauce.
7. Pour the nanban sauce over the salmon.

Shiraae (Tofu salad):
1. Place the kitchen paper over the bowl and put tofu. Mush tofu and drain well.
2. Cut the carrot into match stick sizes. Thinly slice the shiitake mushrooms. Cut spinach into small pieces.
3. Put spinach and little water in a heat resistance container and microwave for 2 minutes. Squeeze and drain the spinach.
4. Put carrot and shiitake mushrooms in a pot and add dashi, sugar and soy sauce. Simmer until the liquid evaporates.
5. Roast the white sesame seeds in a frying pan and grind them with using mortar and pestle.
6. Add tofu and simmered vegetables. Then, put seasonings and mix well.

Miso soup:
1. Cut fried tofu, shiitake mushrooms and rape blossoms into small pieces.
2. Add dashi soup stock in a pot and start to heat with medium flame.
3. Put the stem of rape blossoms first. Then, fried tofu and shiitake mushrooms. At the very end, add rape blossoms leaves. 4. When it cooked, add miso paste.
5. Just before boiling, turn off the heat.

mini Onigiri:
1. Prepare the steamed Japanese rice.
2. Make small balls.
3. Wrap the rice balls in seaweed.
